Dietary for Nursing Home Administrator

This course provides the student with the knowledge to identify the basic nutritional requirements of the elderly residents. This class will explore the role of the registered dietician, and the skills necessary to develop a plan for food purchasing and delivery. The principles of dietary sanitation with regard to food preparation, food storage, serving and clean-up, as wwll as, dishwashing techniques will be discussed. In addition, the student will be able to identify the components of care plan requirements that involve residents' individualized needs and adaptations.
